Recipe Review: Slow Cooker Chicken Parmesan Pasta

I love love love to cook! If I had the time I would plan out recipes in advance and make intricate meals that would take hours of time in the kitchen with the music playing or a good Hallmark movie on. In reality, I’m lucky if I remember to take meat out of the freezer in the morning. Some nights I’m frantically trying to brown a brick of frozen meat while constantly flipping it side to side in the pan 😱 I’m not the only ones who’s ever done that right?

My kids get home around 3:30 and you’d think they haven’t eaten in the past month so it’s snacks, homework, chores and nonstop bickering. On these crazy, rushed evenings with schoolwork, sports, religion and meetings, I look forward to slow cooker meals. The problem with slow cooker meals I often find is that some require a large amount of prep work. If I wanted to do the prep work some of them require then I wouldn’t be searching for an easy slow cooker meal now would I? Needless to say I am always on the hunt for simple slow cooker meals all of my people will eat.

Recipes online can be a little frustrating at times. You may not have some random ingredient you’ve never heard of or it may just turn out to be horrible. Every once in a while you find a keeper to add to your collection. My plan here is to pick a different weekly recipe and try it out so we don’t all have to waste our time. Then afterwards I’ll post how it turned out, what if anything I tweaked and provide a link to the original recipe.

First up….Slow Cooker Chicken Parmesan Pasta from Damn Delicious. This one was so easy! I honestly threw my chicken in the crockpot frozen too. I had a busy morning and wasn’t sure if I would be able to get back home to start it in time, so I figured I would just cook it on low longer. When I make my own marinara sauce I always use red wine so I added some to the crushed tomato mixture, and really any red wine will do. I grab whatever open bottle I may have around. Let me tell you that my house smelled so good when I came home later in the afternoon! I followed the recipe pretty much after that exactly. I didn’t have fresh parsley to top off with at the end and I was out of fresh Parmesan so Kraft did the trick. It was definitely a hit in my house with everyone. I forgot to pick up a loaf of Italian bread on the way home so I made poor mans style….which oddly enough my kids prefer 😂

This one is a keeper for sure!
