My daughter and I could both live on pasta if the rest of the family would allow it! Unfortunately they aren’t huge pasta lovers like we are but they do pretty much eat whatever I make without complaining. Tonight I made one of our favorite dishes, Chicken Cacciatore. If you do a quick google you’ll find tons of recipes that are all over the board. Some call for wine or broth, while others throw in capers or carrots, but the way I’ve made it for the last ten or so years is super easy and so good!
In a large sautรฉ pan I start with about 3 tablespoons of butter, we use Olivio olive oil alternative because it’s โค๏ธ healthy. Then I toss in chicken thighs. I always try to cut as much fat off as possible and I do cut the thighs up into halves or thirds. It cooks better/quicker and my kids like the smaller pieces . Just cook until browned on the outside, don’t worry about cooking through. Remove them from the pan. Then I toss cut up mushrooms, onions, peppers (I use all colors) and garlic into the same pan. Cook just until they start to soften. Normally I make my own tomato sauce or use sauce I’ve previously made and frozen, but on occasion I just use a jar of store bought sauce. Pour the sauce into the pan with the veggies, toss the chicken back in and let it simmer for about 15-20 mins. In the meantime make your pasta, we use spaghetti or linguine most often. That’s it! How easy was that?? Now toss it all together. We had ours with garlic bread and of course my kids love to hand grate their own Parmesan cheese ๐ง
